Steamed Spinach with Garlic, Almonds, and Cranberries

Ingredients

  • 1 (10-ounce) package frozen spinach, thawed

  • 2-3 cloves fresh garlic, thinly sliced or minced

  • Salt and black pepper to taste

  • Sliced almonds (about ¼ - ½ cup, or to your preference)

  • Dried sweetened cranberries (about ¼ - ½ cup, or to your preference)

  • A drizzle of olive oil (optional, for flavor and nutrient absorption) 

Instructions

  1. Prepare the spinach: Thaw the frozen spinach according to package directions or overnight in the refrigerator. Once thawed, press out excess water with the back of a spoon or a clean kitchen towel to avoid a watery dish.

  2. Toast the almonds (optional but recommended): In a dry skillet over medium heat, toast the sliced almonds, stirring frequently until fragrant and lightly golden brown, about 1-2 minutes. This enhances their flavor and crunch. Set aside to cool.

  3. Steam the spinach:

    • Stovetop Steaming: Place the thawed and drained spinach in a steamer basket over boiling water. Cover and steam for 3-5 minutes, or until the spinach is tender and heated through.

    • Microwave Steaming: Place the spinach in a microwave-safe bowl. Cover and microwave on high for 3-4 minutes, until the spinach wilts and reduces in volume.

  4. Sauté the garlic (optional): In a small pan, heat a drizzle of olive oil over medium heat. Add the sliced or minced garlic and sauté until fragrant, about 30 seconds to 1 minute, being careful not to burn it.

  5. Combine and season:

    • Transfer the steamed spinach to a serving bowl.

    • If using sautéed garlic, add it to the spinach and gently toss to combine.

    • Stir in the toasted almonds and dried sweetened cranberries.

    • Season to taste with salt and pepper.

  6. Serve: Serve the steamed spinach immediately as a side dish or incorporate it into your favorite meals
